Comfort food at its finest. Kids love Cheeseburger Mac 'n' Cheese and so do grownups. Quick, easy, satisfying and good for you.

 

 

Cheeseburger Pasta

Servings: 6 | Serving size: about 1 cup

Cooking Time: 30 Minutes

This recipe can be multiplied by 2 or 3 and makes good leftovers.

Serve with Lemon Butter Brussels Sprouts or Cole Slaw or Healthy Caesar Salad or Minted Carrots or Minted Carrots - Low Sodium Version or Creamed Spinach or Creamed Spinach - Low Sodium Version

1 lb 95% lean ground beef
1 1/2 cups water
8 ounces whole wheat macaroni pasta
5 ounces 2% milk (divided)
3 tsp flour
2/3 cup 2% sharp cheddar cheese (shredded)
1/4 tsp paprika
1/2 tsp dry mustard
dash, or to taste cayenne pepper
1/4 cup low sodium ketchup

In a large skillet, brown the ground beef, drain well and set aside.

Wipe out the pan and add the elbow macaroni and the water. Bring to a boil, reduce heat and cover. Cook approximately 8 minutes, or until al dente, stirring frequently until all the water is absorbed.

While the macaroni is cooking, mix together 2 Tbs. of the milk with the flour in a small bowl.

Warm the remainder of the milk in a saucepan and add the flour mixture, then cook over low heat, whisking frequently until the mixture thickens.

Add the cheese and stir well until it is completely melted and then add the paprika, dry mustard and cayenne.

Add the catsup, cheese mixture, and cooked beef to the macaroni, stirring well. Serve.
