You may have had an avocado crema like this at a Mexican or Southwestern restaurant. It make a great topping for almost anything, with all of the flavors coming through just right - lime, garlic, avocado, and cilantro. Many versions that I have had are a bit spicy, and you could add some crushed red pepper flakes or a bit of cayenne pepper and the crema will really pop.
Serve this over grilled fish, on tacos, with roasted chicken, or even on your sandwiches.

Cooking time: 15 minutes (does not include chilling time)
This recipe can easily be multiplied and will keep well for up to 48 hours in the refrigerator.
|1 clove||garlic (finely minced)|
|1/2 tsp.||lime zest|
|1 cup||full fat Greek yogurt|
|1 cup||fresh cilantro|
|to taste||fresh ground black pepper|
Place the garlic, lime and lime juice in a blender or mini-chopper.
Pulse for about 1 minute until the garlic is as small as possible.
Add the yogurt and pulse until blended.
Add the avocado, cilantro, salt and pepper.
Pulse until smooth.
Chill well before serving.
Serving size = 1/4 cup
