Evaporated Milk

Evaporated milk is just that. It's milk that has had about 60% of the water removed from it (and you thought it came from evaporated cows). Check the label before you buy. You'll find evaporated whole milk, evaporated 2% milk, and fat-free evaporated milk. There are a lot of recipes like my Pumpkin Pie recipe that work well with evaporated milk and it also works well in sauces. I always have cans in my pantry.

2 tablespoons evaporated milk = 42 calories, 2g fat, 1.5g sat fat, 0.75g mono fat, 2g protein, 3g carbohydrates, 33mg sodium, 9mg cholesterol

2 tablespoons low-fat evaporated milk = 25 calories, 0.5g fat, 0g sat fat, 0g mono fat, 2g protein, 3g carbohydrates, 35mg sodium, 5mg cholesterol

2 tablespoons non-fat evaporated milk = 25 calories, 0g fat, 0g sat fat, 0g mono fat, 2g protein, 4g carbohydrates, 35mg sodium, 0mg cholesterol
