I have loved cucumbers in vinegar since I was a kid. My mother made them very simply as peeled and sliced cucumbers (not seeded) with oil, white vinegar and a bit of salt and pepper. The mint was sprinkled on sometimes since it grew wild in our side yard. A taste of the South in the summer.
This variation is a little more elegant and I like to use rice vinegar because it's not as acidic and lets the sweetness of the cucumber and mint come through better.

This recipe does not make very good leftovers.
2 medium | cucumbers (peeled, seeded and sliced into crescents) |
2 tsp | olive oil |
2 Tbsp | rice vinegar |
1/8 tsp | salt |
fresh ground black pepper (to taste) | |
1/4 tsp | dried peppermint |
Fold together the cucumbers, olive oil, rice vinegar, salt, pepper and peppermint.
Chill.
