This is a fantastic way to have cauliflower. he light coconut milk makes it rich and creamy but at the same time lactose free. This is a great way to get your kids to eat their veggies.

Not on a low sodium diet? Here's the standard Creamy Cauliflower.
2 cups | water |
1 small | head cauliflower |
1/4 cup | reduced-fat (lite) unsweetened coconut milk |
1/8 tsp | salt |
fresh ground black pepper |
Place the water in a medium stock pot fitted with a steamer basket over high heat.
Place the cauliflower in the steamer basket and steam for about 20 - 25 minutes until soft.
Using a blender or a stick blender puree until smooth. Add the light coconut milk and salt and pureé. Reheat gently and serve.
