Cooking Techniques

Hot vs. Chilled Soups

What determines whether a soup is to be served hot or chilled? First and foremost: you. If you like it cold serve it cold and if it tastes better to you hot then so be it. Some soups I like both ways. In general savory soups are better hot and sweeter soups are better cold. Think of Roasted Eggplant Soup. The umami flavors are masked when chilled, while the sweeter flavors of a melon or strawberry soup will be less pronounced if the soup is hot.
