French Dressing is a classic. There are thousands of versions but most are variations on a tomato based vinaigrette - essentially more tomato than vinaigrette. Sweet, umami, tart and salty all in one.
This version is based on those classic flavors, but instead of the typical catsup it uses no salt added tomato paste. The balance of the tartness of the tomato paste and vinegar is great, but it requires a bit of sugar. However, most recipes have almost as much sugar as oil and they are just too sweet. The garlic powder and paprika bring it all together.
Servings: 8 | Serving size: 2 Tablespoons
Cooking Time: <30 Minutes (does not include chilling time)
This recipe can easily be multiplied and keeps well for about 4 - 5 days in the refrigerator.
Place the olive oil, tomato paste, vinegar, garlic powder, paprika, sugar and salt in a blender.
Puree until smooth.
Chill well before serving.
