This is a light and wonderful salad that is full of flavor. I like the cucumbers with the peel on and with the seeds. The wonderful textures of the cucumbers and tomatoes combined with the creamy dressing makes this a perfect side dish for your summer cookout.

|2 medium||cucumbers (cut into large dice)|
|1 small||tomato (cut into large dice)|
|1 small||shallot (minced)|
|fresh ground black pepper (to taste)|
|2 Tbsp||fresh chives (minced)|
|2 Tbsp||reduced-fat sour cream|
Mix all ingredients together and chill before serving.
