I love carrot salad and this is the version I grew up with. It's been on my to do list for some time and I am glad I finally got around to it. The great thing is that it's so easy and quick and perfect for your picnic or potluck supper.

Keeps well in the refrigerator for 2-3 days.
|1 lb||carrots (peeled and shredded)|
|1/4 cup||reduced-fat or fat-free mayonnaise|
|1/4 tsp||lemon zest (minced)|
|1 Tbsp||fresh lemon juice|
|fresh ground black pepper (to taste)|
Fold together the carrots, raisins, mayonnaise, lemon zest, lemon juice, salt and pepper.
