Carrot and Raisin Salad is a classic. It is one of those recipes that people forget about, but when you take a bite it immediately transports you to a warm summer day sitting on the lawn with the barbecue on the grill.

The great thing is that it's so easy and quick and perfect for your picnic or potluck supper. Even better, it has four grams of fiber and helps add a point to your Mediterranean Diet Score.


 

Traditional Carrot Salad

Servings: 4 | Serving size: about 1 cup

Cooking Time: 15 Minutes

This recipe can easily be multiplied and keeps well in the refrigerator for 2-3 days.

Traditional Carrot Salad recipe from Dr. Gourmet

Ingredients

  • 16 ounces carrots (peeled and shredded)
  • 1/2 cup raisins
  • 1/4 cup reduced fat mayonnaise
  • 1/4 tsp. lemon zest (minced)
  • 1 Tbsp. fresh lemon juice
  • 1/8 tsp. salt
  • fresh ground black pepper to taste

Fold together the carrots, raisins, mayonnaise, lemon zest, lemon juice, salt and pepper.

Chill well before serving.
