|1 Tbsp||olive oil|
|3 cloves||garlic (sliced)|
|1 large||onion (diced)|
|1 1/2 lbs||Roma tomatoes (quartered)|
|fresh ground black pepper (to taste)|
|1 Tbsp||dried basil|
|1 tsp||dried oregano|
|12 ounces||whole wheat or gluten-free pasta|
|3 ounces||parmesan cheese (grated)|
Place the olive oil in a large skillet over medium-high heat. Add the garlic and onions. Cook for about 5 minutes, stirring frequently.
Add the tomatoes and cook for about 5 minutes, stirring frequently.
Add the water, salt, pepper, basil and oregano.
Reduce the heat to medium so that the sauce is simmering. Cook for about 15 Ė 20 minutes, stirring occasionally.
While the sauce is cooking place the water on to boil. After it is at a full boil add the pasta and cook, stirring occasionally, until al dente. Drain and then top with about 3/4 cup sauce and 1/2 ounce cheese.
Serving size = 3/4 cup sauce with 2 ounces pasta and 1/2 ounce cheese
