"A trout in the pot is better than a salmon in the sea."
-Irish Proverb
This recipe is amazingly flavorful. It is a perfect balance of tartness from the lime juice and the freshness of lime zest. The honey and aromatic spices balance the tartness well and the spiciness really brings it all together.
You don't need a lot of oil for this glaze. As it roasts, the salmon gives up a bit of oil, and if you use more oil in the pan or the glaze, this will be, quite simply, too greasy.
The 1/4 teaspoon of red pepper flakes is only sort of spicy and if you like REALLY spicy, add another 1/4 teaspoon.
