The refrigerator light goes on...

Often the simplest recipes are the best. This chicken dish is sweet, savory, salty, spicy and sour. The extra glaze makes a lovely sauce especially served over the Jasmine Rice. It's hard to tell which is best -- how simple the dish is or how good it is.


 

Spiced Chicken with Honey Glaze

Servings: 4 | Serving size: one 4 ounce chicken breast

Cooking Time: 30 Minutes

This recipe can be multiplied by 2,3.

This recipe makes good leftovers for sandwiches or salad.

Serve with Jasmine Rice or Jasmine Rice - Low Sodium Version or Brown and Wild Rice or Brown Rice

AND

Serve with Parmesan Squash. or Herbed Zucchini or Green Beans with Red Onion or Zucchini with Sun Dried Tomatoes or Zucchini with Sun Dried Tomatoes - Low Sodium Version or Yellow Squash and Onions

4 Tbsp honey
1 cloves garlic (minced)
1 small shallot (minced)
2 Tbsp rice vinegar
2 tsp prepared horseradish
1 tsp paprika
1/4 tsp cayenne pepper
1/4 tsp salt
4 4 ounce boneless chicken breasts

Place all ingredients in a stainless steel or glass mixing bowl. Toss the chicken in the glaze to coat well. (The recipe can be prepared to this point, covered and refrigerated overnight.)

Preheat oven to 375°F. Place a large skillet in the oven.

After the pan is hot place the chicken breasts inside and then cover with the remaining glaze. Return the pan to the oven. Cook for 7 minutes on the first side and then turn. Spoon any excess glaze over the chicken.

Cook for 8 - 10 minutes more and serve.
