So you think you don't like liver. You might be wrong. So many people have had liver that has been cooked until it is tough as shoe leather, and that brings out all the bitterness. This recipe is full of great flavor with onions, mushrooms and Cajun spice. It is quick and simple, tasty and great for you.
Servings: 2 | Serving size: 4 ounces chicken livers with veggies

This recipe does not make very good leftovers.
Serve with Dirty Rice or Brown and Wild Rice or Brown Rice or Brown Rice with Parsley
2 tsp | olive oil |
1 medium | red onion (thinly sliced) |
8 ounces | shiitake or crimini mushrooms (thinly sliced) |
8 ounces | chicken livers |
1/8 tsp | salt |
fresh ground black pepper (to taste) | |
2 tsp | no salt added Creole seasoning |
1/3 cup | beer or gluten-free beer |
Place the oil in a large skillet over medium-high heat.
Add the onions and cook, stirring frequently, for about 5 minutes, until they begin to brown.
Add mushrooms and cook for 1 minute, then cover and reduce heat to medium.
Cook for another 5 minutes, stirring occasionally.
Add the livers, salt, pepper and creole seasoning, stir, and cook for 2 minutes or until the livers start to brown.
Add the beer, stir, and recover. Reduce heat to medium-low and allow to simmer, stirring occasionally, for 8-10 minutes. Serve over rice.
