The refrigerator light goes on...

Hamburgers are rich and savory on their own, but this recipe takes that to a new level. All of the ingredients are full of great umami flavor - mushrooms, mustard, Worcestershire sauce, beef, and cheddar cheese.

The best part is that one burger has only 300 calories. Serve this with Parsnip Fries for the perfect meal.


 

Mushroom Cheddarburgers

Servings: 2 | Serving size: 1 burger with bun

Cooking Time: 30 Minutes

This recipe can be multiplied by 2, 3, 4, 5, 6, 7, 8.

Cooked burgers keep well but should reheated with care to avoid overcooking.

Serve with Parsnip French Fries

1 tsp olive oil
8 ounces small crimini mushrooms (thinly sliced)
1 Tbsp Worcestershire sauce
1 tsp Dijon mustard
4 ounces 95% lean ground beef
2 ounces reduced-fat cheddar cheese (grated)
2 whole wheat or gluten-free hamburger buns

Mushroom Cheddarburger

Place the olive oil in a medium skillet over high heat. When the pan is hot, add the mushrooms and sauté, stirring frequently, for 10 minutes or until the mushrooms are well caramelized. Place the mushrooms in a bowl and chill in the refrigerator for ten minutes.

While the mushrooms are cooking, in a small bowl mix together the Worcestershire sauce and the mustard.

When the mushrooms are cool, chop them into a small dice and add them to the bowl with the Worcestershire/mustard mixture. Add the ground beef and the cheese, then mix thoroughly and pat into 2 burgers.

Place a medium skillet over medium-high heat and when the pan is hot, add the burgers. Cook on one side for 5-8 minutes, turn over, and cook for another 5-8 minutes.

Serve on a whole wheat or gluten-free hamburger bun with lettuce and tomato, if desired.
