This a variation on my brother's pimento cheese. There are a couple of things about this recipe that really make it work. One is the thinly sliced green onion, and the second is to add a LOT of black pepper (at least the pepper is what I love about this). This is great for parties - serve it as a dip with veggies - but is also good on sandwiches.
Servings: 4 | Serving size: about 1/2 cup
Cooking Time: 30 Minutes or less. Note that cooking time does not include chilling time.
This recipe can easily be multiplied and keeps well, refrigerated.
|4 ounces||reduced fat cheddar cheese (grated)|
|2 small||green onions (thinly sliced)|
|4 tsp.||reduced fat sour cream|
|to taste||fresh ground black pepper|
Place the cheese, pimentos, green onion, and sour cream in a bowl and fold together until blended.
Chill well before serving.
Serving size: about 1/2 cup
