"Poets have been mysteriously silent on the subject of cheese." -G.K. Chesterton, Alarms and Discursions
This a variation on my brother's pimento cheese. There are a couple of things about this recipe that really make it work. One is the thinly sliced green onion, and the second is to add a LOT of black pepper (at least the pepper is what I love about this). This is great for parties - serve it as a dip with veggies - but is also good on sandwiches.
