The refrigerator light goes on...

Stuffed mushrooms are really the quintessential cocktail party item. There are so many things you can do with them. From something as simple as crabmeat or smoked gouda, to a slightly more complex dish like this one.

The key to this recipe is the GARLIC. The recipe calls for a single head of roasted garlic, but you could just as easily use two if you absolutely love garlic (or are trying to ward off vampires). It is easier to make the roasted garlic goat cheese first and chill it until you are ready to cook the mushrooms. Stuff the chilled cheese into the room temperature mushroom caps and then roast - the mushrooms will cook a bit faster than the goat cheese that way.

 

 

Roasted Garlic Mushroom Hors d'oeuvres

Pieces: 12

Cooking time: 30 minutes (does not include chilling time)

This recipe can easily be multiplied and leftovers will be good for breakfast the morning after the party. The breadcrumbs might lose their crunch, however.

This recipe requires making Roasted Garlic first.

6 large crimini mushrooms (left whole but stem removed)
1 head Roasted Garlic
2 ounces goat cheese
2 small green onions
1 Tbsp panko bread crumbs or gluten-free panko bread crumbs
spray olive oil
to taste black pepper

Roasted Garlic Mushroom Hors d'oeuvres recipe from Dr. Gourmet

Slice the green onions lengthwise and then very thinly crosswise.

In a small bowl, mix together the roasted garlic, goat cheese, and green onions until smooth.

Stuff each mushroom cap with an equal amount of the goat cheese mixture.

Top each stuffed mushroom cap with about 1 teaspoon of bread crumbs.
