This is a great variation on the tartar sauce you have always had. Mind you, I love tartar sauce, but the garlic and capers just add so much to fish that you’ll find this a recipe you’ll make over and over.
These are the flower bud of a bush from the family Capparidaceae. Cultivated in the hot climates of the Mediterranean and Asia, the immature flowers are picked and then pickled in vinegar brine. They are bland when raw but pickled capers are pungent with a sharp piquant flavor.

This recipe keeps well for about 3 days in the fridge.
|4 Tbsp||reduced fat mayonnaise|
|4 cloves||roasted garlic|
|2||green onions (sliced thin)|
|1 Tbsp||liquid from the jar of capers|
|1 Tbsp||2% milk|
|fresh ground black pepper (to taste)|
Place the mayonnaise in a small mixing bowl and add the roasted garlic. Mash the garlic into the mayonnaise until smooth.
Fold in the green onions, capers, caper liquid, milk, salt and pepper.
Serving size = about 1 tablespoon
