Garlic and spinach are just made for each other. Make sure that you use a very large pan for this recipe so that the water in the spinach will evaporate while you are cooking.

Cooking Time: 15 Minutes
This recipe can easily be multiplied but does not make very good leftovers.
This recipe also requires making Roasted Garlic.
1 tsp | olive oil |
4 cloves | roasted garlic |
8 ounces | fresh spinach |
1 tsp | unsalted butter |
1/8 tsp | salt |
fresh ground black pepper (to taste) | |
1/8 tsp | ground nutmeg |
Place the olive oil in a large skillet over medium high heat. Coarsely chop the cloves of garlic and add to the pan.
Sauté for about 1 minute. Add the spinach, butter, salt, pepper and nutmeg.
Cook for about 3 minutes and serve.
