This is a fantastic way to have cauliflower. The light coconut milk makes it rich and creamy but at the same time lactose free. This is a great way to get your kids to eat their veggies.

|1 small||head cauliflower|
|1/4 cup||reduced-fat (lite) unsweetened coconut milk|
|fresh ground black pepper|
Place the water in a medium stock pot fitted with a steamer basket over high heat.
Place the cauliflower in the steamer basket and steam for about 20 - 25 minutes until soft.
Using a blender or a stick blender puree until smooth. Add the light coconut milk and salt and pureť. Reheat gently and serve.
