This sauce is perfect on almost any spicy food. You can use it on curried food or spicy Spanish Mediterranean dishes like Spanish or Moroccan cuisine.


 

Caper Yogurt Sauce

Servings: 4 | Serving size: 3 Tablespoons sauce

Cooking Time: 15 Minutes

This recipe can be multiplied by 2, 3, 4, 5, 6, 7, 8.

Chopping and mixing time does not include chilling time. This recipe makes great leftovers and the sauce will keep for about 48 hours in the refrigerator.

1/2 small cucumber (seeded but not peeled)
1/2 cup non fat Greek yogurt
1 Tbsp capers
1 Tbsp fresh oregano (minced)
1 small green onion (thinly sliced)
1/8 tsp salt
fresh ground black pepper (to taste)

Grate the cucumber. Place it in a bowl with the yogurt, capers oregano, green onion, salt and pepper. Chill.
