Chef Tim Says....

 I am on my way to Spain and will be bringing back a lot of great ideas and recipes. The food is amazing and the epitome of great Mediterranean cooking. It has everything we love in the U.S. - bold, fresh spicy flavors, fresh fish, fantastic veggies. All of this is healthy and it is one of my favorite cuisines.

In the meantime, here are some recipes that I tasted a few years ago on my last trip and brought home.

Lentils and Eggs

This is the loveliest recipe that I had while in Spain. It's simple and so great for you. What is more wholesome than lentils and eggs? It is really simple and takes all of 30 minutes active cooking time.

Spanish Beef Stew with Olives

Stews are great. It's just that simple. You can throw it all in a pot, put the pot on to cook and two hours later you have dinner. The great thing is that this is so versatile and this is typified by the fact that every culture has hundreds of stew recipes.

Shrimp and Garlic with Olives

This is a variation on the traditional Spanish gambas al ajillo (shrimp in garlic). There are dozens of variations, but the basic recipe is olive oil, shrimp, garlic, salt, and pepper. You can add parsley, other herbs, black or green olives or almost anything you wish to make the dish your own.

Tuna and Tomato Salad

This recipe is so deceptively simple and at once complex. It was served to me by Chef Luis at the Bodega Garmendia in Spain for lunch and is a staple of Spanish kitchens. The tomatoes are sweet and tart, there's a bit of bite from the onion, savory tuna with the fruity olive oil. Just the sprinkle of salt and pepper finishes it off. It just tastes like a hot summer day in Spain: with a bowl of chilled pea soup and a crust of bread, you're there (then time for a siesta).
