Dry rubs are a blend of ground spices for spreading on foods to add flavor. Wet rubs are essentially marinades and differ by incorporating oils and often acids such as lemon juice or vinegar. Dry rubs have some advantages over marinades. The spices add a more intense flavor while helping create a crusty texture.
Use your hands for rubs (hence the term). If you don't want to touch the food (or if the rub is particularly spicy), you can put it in a zipper bag and add the rub. Toss the bag to coat the food inside and then rub it through the plastic.
I had this rice on a recent trip to the Caribbean and it was delicious. The tomato gives the rice a sweetness with a little bit of tart and the lime is fresh and bright. It all comes together with a creamy mouthfeel and happily accompanies everything from curries to jerk shrimp or chicken.
This recipe makes a LOT of rice. You can make this in half size batches and the leftover canned tomato and black beans will freeze well for other recipes.
