Chef Tim Says....

Timothy S. Harlan, M.D.Not too long ago a Dr. Gourmet fan said to me, "I really wish you would include photos with the recipes." She was talking about trying to visualize the instructions for how to chiffonade basil on one of the dishes on the Web site and said that she finally figured it out, but having pictures as a guide would be a big help.

This week we are trying something new at Dr. Gourmet: step by step recipes. This is not really revolutionary, but for us it is a lot more work and we're not Good Housekeeping or Cooking Light with a huge team of food stylists and photographers.

It is important to us, however, and what we want most is your feedback. We have always had people say nice things about how easy Dr. Gourmet recipes are to follow. Chopped Greek Salad

 I like Greek Salad a lot and there is a recipe for it on the Dr. Gourmet Web site. I have become a fan of the chopped salad, however. Very similar ingredients but in smaller cuts, folded together as a complete dish. In this case I've added the white beans to provide some carbohydrates, and along with the cheese, veggies and great quality fats, this is a fantastic Summer meal.

 Q: Is there another way for a vegetarian to get protein other than tofu and beans?

A: There are so many great choices for getting protein. Some are more complete than others, meaning that they contain all of the essential amino acids. One reason soy products are so desirable is that they offer a complete protein, but so does buckwheat and quinoa. Eggs and dairy products are also complete proteins, but many vegetarians avoid both eggs and dairy.

The best strategy to get the complete set of amino acids is to combine two of grains, legumes or nuts and seeds. Vegetarian Protein
