I am interviewed by the media fairly regularly. Often the topic is something controversial, and that makes sense. It's difficult for news organizations to get people to pay attention and contentious topics do stand out. I love poached salmon and it's perfect for a hot summer's day. The short cooking time doesn't heat up the kitchen too much and when served the cool fish is just right on a hot day. I like this tart yogurt sauce, but you can top poached salmon with your favorite salsa or mayonnaise.
By mincing the shallot very finely and adding it to the rice while it sits and continues to steam, it will actually cook slightly. Combined with the olive oil and oregano, this makes for a fragrant and simple side dish.
