It's Labor Day here in the United States. I love summer but it's about over and time to celebrate. Holidays are certainly a good time to splurge a bit and maybe eat too much. Not a big deal—that's one of the most important parts of eating healthy. It's really important to give yourself permission to cut loose now and then.
That said, you can still eat food that's great for you even if you're eating a bit too much. I've put together some ideas for you.
I had a reader send a note recently asking for the Scallop and Barley Salad and she mentioned that it's perfect to take to a pot luck. It's easy to make ahead and people love it. If it's your barbecue the Cajun Cheeseburgers are great. Pair that with this Potato Salad recipe sent in by Barbara Gendelman and you're good to go.
