Dr. Tim Says....

On Being a Patient:
Diagnosed with Celiac Disease, IV

May 15, 2009

Took the day off. Very much ahead on work. We went to the French Quarter and wandered about. In a way, I suppose we ate out for the second time. Went to a little bistro and had a cheese plate and a glass of wine as lunch. Fruit, great cheese and fantastic lavender honey.

I can't say that I have felt abnormal being so strict. A lot of the info that I read can be pretty harsh. It just seems so unnecessary and the research seems to support that there is some level of gluten that can be tolerated. I don't think that it's license to eat anything but the idea of never eating in a restaurant is a mistake.

Mind you, I do know a lot about food and that helps. But there's got to be that happy medium. I am not ready to find that and until I see a change in something - hematocrit, antibodies specifically.

Even so, nice to be waited upon.

I made the most delicious Mango Chicken Salad today. Been thinking about it for a while. It's so good and great for the coming week with Memorial Day.

Booked flights to California. I have to start thinking about travel. There's so much to think about. I have always said that part of eating healthy is all about planning so I have to begin thinking about that part of it.

In the past I have had things sorted because I have planned before. I know where things are in L.A. and most every other airport. I carry nuts and crunchy bars and pick up fruit the minute I hit town. We stock stuff for the hotel room. So, this time should be an adventure. I guess I can take the rice cakes and some nuts. Will need to look carefully at airports as I go.

198 watts in 20 miles. That at 18.3 miles per hour. A personal best for me.

Amazing. I feel great! Time to make an appointment with the doctor. Getting ready to go to Spain for San Fermin and will really be traveling then, so the trip to L.A. should be a great test.
