This is a great summer side salad for grilled fish, chicken or steak. It has everything you would want: it's both a healthy starch and a vegetable side dish. Serve this topped with a simple grilled piece of salmon that has been chilled for the perfect hot weather meal.

Depending on the thickness of the cucumber and how fine a dice you want, cut at least two or three more lengthwise slices from each half of the cucumber.

Stack the cucumber slices and cut them lengthwise in 2-3 slices. The slices should be the same width as the previous cuts so that the result is square.
