The refrigerator light goes on...

When I eat at really great Mexican restaurants and have really great mole I would love to share those flavors. A truly great mole takes all day to make (in my opinion) and has great chicken and chocolate and spice. Rich and creamy - but it takes time.

This is a good compromise. Cooking the chicken thighs on high heat releases a lot of savory chicken flavor, and simmering that with the coffee (coffee works better for the quick recipe I think) and other spices releases all of the savory and spicy flavors. The baker's chocolate thickens the soup and rounds out the flavors.


 

Quick Chicken Mole

Servings: 2 | Serving size: 2 cups

Cooking time: 75 minutes

This recipe can easily be multiplied and makes great leftovers. Freezes well.

1 tsp. olive oil
8 ounces boneless, skinless chicken thighs (cut into 1/2 inch cubes)
1 medium onion (diced)
2 medium ribs celery (diced)
1 small green pepper (seeded and diced)
1 - 15 ounce can no salt added black beans (drained and rinsed)
2 cups water
1/8 tsp. ground allspice
1/8 tsp. ground cinnamon
1/2 tsp. dried oregano leaves
1/4 tsp. ground cumin
1/2 tsp. chili powder
1/4 tsp. salt
1 small chipotle in adobo (finely minced)
1 Tbsp. no salt added tomato paste
1 tsp. instant coffee or cocoa
2/3 ounce unsweetened baker's chocolate

Quick Chicken Mole recipe from Dr. Gourmet

Place the olive oil in a medium saucepan over high heat.

Add the chicken and cook at high heat, stirring frequently, for about 4 minutes.

Add the onion and celery and cook for another 4 minutes. Stir frequently.

Add the pepper and cook for 2 minutes. Stir frequently.

Add the black beans, water, allspice, cinnamon, oregano, cumin, chili powder, salt, chipotle, tomato paste, and coffee.

Simmer for 50 minutes. Stir occasionally.

Add the chocolate and simmer for 10 minutes to melt the chocolate and incorporate it into the stew. Stir occasionally.

Serve.
