The refrigerator light goes on...

Carrot salad had been on my to do list for some time and when I finally got around to it I went at it with a vengeance. I made a whole lot of varieties including this curried salad. The savory goes great with the sweet carrots and the mint adds a great freshness.


 

Curried Carrot Salad

Servings: 4 | Serving size: about 1 cup

Cooking Time: 15 Minutes

This recipe can be multiplied by 2, 3, 4, 5, 6, 7,8.

This recipe keeps well in the refrigerator for 2-3 days.

1 lb carrots (peeled and shredded)
1/2 cup raisins
1/4 cup reduced-fat or fat-free mayonnaise
1/4 tsp lemon zest (minced)
1 Tbsp fresh lemon juice
1 tsp curry powder
1 tsp fresh mint (minced)
1/4 tsp salt
fresh ground black pepper (to taste)

Fold together the carrots, raisins, mayonnaise, lemon zest, lemon juice, curry powder, mint, salt and pepper.

Chill.
