Chicken Skin
So much emphasis is put on skinless chicken because most of the fat in chicken is in the skin. At one time there had been a debate about whether cooking chicken with the skin on—and removing it after cooking—was higher in fat than simply peeling the skin off before cooking.

Portion Distortion
You read every day that there has been a dramatic increase in the size of portions. Everything from fast food to candy has been "supersized" in the last 30 years. The good news is that there are also a lot of great ingredients that have been produced with less fat and fewer calories. By using those foods and combining them with the right portion size it's easy to eat healthy.

Proof that You Can Eat Less, Eat Fewer Calories, and Still Be Satisfied
There are two ways to eat fewer calories. One is to eat smaller portions and the other to reduce the amount of calories in a particular dish. With Dr. Gourmet recipes I work at both of these approaches, enhancing the taste and satisfaction of a recipe by choosing lower calorie ingredients that maximize flavor.
