"But once in a while you might see me at In and Out Burger; they make the best fast food hamburgers around."
-Thomas Keller, Chef
This juicy burger is full of savory flavor and so easy to make. It's worth the extra step to brown the mushrooms and blend them into the burger. Delicious.
Worcestershire is a county in England. The sauce was, however, developed in India by Englishmen and originally bottled back in Worcester, England (hence the name). It contains vinegar, molasses, cloves, anchovies, tamarind, chili peppers, shallots, garlic and onion among other things. It has a great flavor and the low-sodium versions are indistinguishable from the traditional Worcestershire sauce.

| 1 tsp | olive oil |
| 12 ounces | crimini mushrooms (sliced) |
| 6 ounces | 95% lean ground beef |
| 1 Tbsp | Worcestershire sauce |
| 1/8 tsp | salt |
| fresh ground black pepper (to taste) | |
| 1 tsp | dried sage |
| 2 | slices tomato |
| 1 ounce | Provolone cheese |
| 2 | whole wheat or gluten-free hamburger buns |
| 2 | leaves lettuce |
Place the olive oil in a medium skillet over medium high heat.
Add the sliced mushrooms and cook, tossing frequently, until caramelized (about 10 minutes). Remove to a plate and place in the refrigerator to cool.
When the mushrooms are cool mix 2/3 with the ground beef, Worcestershire sauce, salt, pepper and sage until well blended. Pat into two burgers.
When ready to cook heat a medium skillet over medium high heat. Add the burgers and cook for about 7 minutes on the first side. Turn.
Top the burgers with the remaining mushrooms, a slice of tomato and then the cheese. Cook for about 7 – 10 minutes until the cheese has melted slighty.
Serve on a hamburger bun topped with lettuce.
