This rice can be hard to find, but once you do, buy a lot. It is the most wonderful stuff - sweet, flavorful and so good for you. It seems like an, oh, so exotic ingredient but it's really not.


 

Purple Sticky Rice - Low Sodium Version

Servings: 2 | Serving size: 1/2 cup rice

Cooking Time: 30 Minutes

This recipe can be multiplied by 2,3,4.

The cooked rice doesn't keep well. Note: Because of the lack of complete reporting on nutrition information for purple sticky rice, I am not able to give complete information on some nutrients in this recipe.

Not on a low-sodium diet? Here's the standard Purple Sticky Rice.

1 1/2 cups water
1/8 tsp salt
2/3 cup purple sticky rice

In a medium sauce pain heat the water and salt. When it boils, stir in the rice.

Reduce heat to medium-low and simmer, covered, for about 15 minutes.

Do not boil away all of the liquid and do not stir the rice.

When a very small amount of liquid remains, remove the pan from the burner and let it stand, covered, for 5 minutes before serving.
