"Confidence is going after Moby Dick in a rowboat and taking the tartar sauce with you."
-Zig Ziglar, Author

The refrigerator light goes on...

This is a great variation on the tartar sauce you have always had. Mind you, I love tartar sauce, but the garlic and capers just add so much to fish that you'll find this a recipe you'll make over and over.

Garlic Tartar Sauce

Servings: 6 | Serving size: about 1 tablespoon

Cooking Time: 30 Minutes (does not include chilling time)

This recipe can easily be multiplied and keeps well for about 3 days in the fridge.

This recipe also requires making Roasted Garlic

4 Tbsp reduced fat mayonnaise
4 cloves roasted garlic
2 green onions (sliced thin)
2 Tbsp capers
1 Tbsp liquid from the jar of capers
1 Tbsp 2% milk
1/8 tsp salt
fresh ground black pepper (to taste)

Place the mayonnaise in a small mixing bowl and add the roasted garlic. Mash the garlic into the mayonnaise until smooth.

Fold in the green onions, capers, caper liquid, milk, salt and pepper.

Chill.
