This is a great bright, summery variation of the classic cole slaw. It goes well with everything - from burgers to food from the grill.
The zest of any citrus fruit is the outermost, colored layer of the rind. This is where all the essential oil is found and, as such, all the flavor. The white part between the colored zest and the pulp of the fruit is called pith and the strong bitter flavor can ruin your dish.
My utensil of choice for removing the zest from any citrus fruit is the microplane. This is a flat grater about 2 inches wide and 6 to 8 inches long with a handle. This grater has narrow serrations which are extremely sharp. The result is a light feathery zest with less chance that you will dig into the bitter pith.

This recipe keeps well for about 3 days in the refrigerator. Cooking time does not include chilling time.
| 1 small | head cabbage (thinly shredded) |
| 1 large | carrot (peeled and shredded) |
| 1/2 cup | cilantro (coarsely chopped) |
| 3 Tbsp | olive oil |
| 1 tsp | honey |
| 1/8 tsp | cayenne pepper |
| 3/4 tsp | salt |
| fresh ground black pepper (to taste) | |
| 1 | lime |
Place the cabbage, carrot, cilantro, olive oil, honey, cayenne pepper, salt and pepper in a large bowl.
Zest the lime and add the zest to the bowl.
Juice the lime and add the juice to the bowl.
Toss well and chill for at least an hour before serving.
