Chef Tim Says....

 Labor Day is a week away. The summer is almost over and it is time to get ready for parties and picnics. Last week we had some new salads that work great for pot luck if you have been invited to a barbecue. If you are the host and are going to be grilling, here are some ideas, starting with a fish that was inspired by my trip to Chile this past Spring.

 

Grilled Fish with Cilantro Crust

This is a recipe that was inspired by my visit to Chile. The fish there was so fresh and you should choose a meaty white fish that is the freshest in the shop. It is important to start with fish that is cold, pat it with the panko mixture and then cook. The fish will take a little longer to cook if it is cold and will give the crust time to cook completely.

The side of pebre (Chilean salsa) is cool and refreshing and this is perfect served with Roasted Potatoes.

Portobello Burgers
I've had a lot of Portobello mushroom "burgers" at restaurants here and there. They're good, and even though mushrooms are one of the pure umami flavors, there's always seemed to be something missing. Credit to my wife for suggesting the barbecue sauce. It adds just the right touch.

Blue Cheese Burgers
Blue cheese is so savory and at the same time tart, sweet and salty. The combination of hamburger stuffed with blue cheese is great, but the red pepper and onion add even more depth to this burger.

Grilled Red Snapper with Garlic Tartar Sauce
Red snapper is such a great meal. This is a very lean fish that takes almost no time to cook and has a clean, fresh flavor. I do love simple grilled fresh fish with a bit of salt and pepper and lemon or lime but the Roasted Garlic Tartar Sauce gives this a twist that really complements the taste of the fish.

Mediterranean Whitefish in Foil
This is a fantastic way to cook fish, with easy cleanup (just toss the pouches and you're done!). It is traditionally baked in parchment paper, but for most folks the foil is more practical. You can use almost any combination of fish filet, vegetables, liquid and herb or spice along with the olive oil.
