A Gluten Free Monday

 As many of you know we provide a lot of information about eating gluten free here at Dr. Gourmet. As someone who has to follow a gluten free diet myself, I have found that it can be challenging, but there are a lot of great options out there these days.

Every new recipe I post on the Web site is now gluten free. When I was diagnosed four years ago I adapted most of the recipes at DrGourmet.com. This was actually pretty easy because of the array of gluten free pastas, breads and flours on the market. Here's where you can find all of our gluten-free recipes.

We also review gluten free convenience foods as part of our Friday Food Reviews newsletter.

This week's Monday recipe is a gluten free gingerbread. The texture of this is better than the wheat based Gingerbread on the Dr. Gourmet site, with a finer crumb and a softer consistency. In the coming months I will be adding more gluten free baked goods recipes to the site.

Gluten Free Gingerbread

This recipe uses two different gluten free flours to get the texture right. For the all-purpose flour I use Glutino Gluten Free All Purpose Flour and instead of whole wheat flour the Arrowhead Mills Whole Grain Gluten Free Flour.

Both are excellent choices and best used together in this recipe. The "white" flour alone makes cakes too light and crumbly and the "brown" flour used by itself is too dense. Using a blend works great.
