With the Fourth of July coming up fast, here are a few cold salad ideas for you to make the day before that company potluck picnic so that you can relax and enjoy yourself rather than cooking at the last minute. Remember to pack your salads on ice to keep them cold, cold, cold or you could send your friends and family home with more than full tummies and a case of sunburn.
The spiciness of this salad can be as bold or as mild as you like. The basic recipe is mild and adding some Tabasco or your favorite hot sauce is a great idea. If you like, you could add a bit of diced jalapeño or even some smoked hot paprika.
Avocado makes a perfect replacement for mayonnaise. It is rich and creamy but has a fresh umami flavor that mayo doesn't have. An ounce of mashed avocado offers about the same creaminess as a tablespoon of light mayonnaise, but it has twice the monounsaturated fat and about 2 grams of fiber.
This is a bright salad with the wonderful flavor of crab combined with sweet mango and the lovely herbaceous dill. A perfect spring dinner dish. Serve it with a whole wheat roll. Crabmeat can be salty and you might want to hold the salt until you have mixed all the other ingredients. Often you won't need to add any extra salt and this is great if you are on a sodium-restricted diet.
I love egg salad and this curried version is fantastic. Serve it on sandwiches, stuffed into tomatoes or on top of salad greens accompanied with tomatoes or avocados.
