Happy Labor Day!

September 3, 2012

Today is Labor Day here in the United States, and it's the unofficial last day of summer. Time to put away the white shoes and the seersucker suit. Fall is coming with cooler days and nights ahead.

BurgerBut that last day also brings celebrations. A day off of work. Family and friends gathering for pot-lucks and cookouts. Here are some great choices for your end-of-summer get together.

Savory Mushroom Cheeseburgers
This juicy burger is full of savory flavor and so easy to make. It's worth the extra step to brown the mushrooms and blend them into the burger. Delicious.

Barbecue Chicken
If you are really watching calories there are a lot of barbecue sauces out there with fewer calories that are actually pretty low in sodium. I use them actually more often than I make my own. I look for ones that are low in both calories and sodium. One of my recent favorites is Arriba! Fire Roasted Chipotle Bar-B-Q Sauce.

Barbecue Shrimp
The time to satisfaction ratio with this healthy recipe is so low. This takes so little effort and the reward is a sweet, spicy, salty, savory shrimp that goes great with cheesy grits.

Grilled Salmon with Caper Mayonnaise
I like grilled salmon so much and to put anything on it is a bit like gilding the lily, but this mayonnaise is so versatile. You can use most any herb that you like – chives, thyme, basil.

Roasted Corn on the Cob
This recipe includes the pat of butter for your corn on the cob because it just wouldn't be corn without it. Take the pat and enjoy it. This recipe works well both on the grill and in the oven. The grill will give the corn a lovely charcoal flavor.

Cumin, Black Eyes and Corn Salad
The cumin in these black eyes adds just the zing to complement the sweetness of the peas and roasted corn.

Potato Vinaigrette Salad
For potato salads choosing a waxy potato like red potatoes or Yukon Golds will work best. After cooking they are not as flakey and hold together better.

Iceberg Wedge Salad with Blue Cheese Dressing
The classic American salad done healthy.

Ice Cream Sandwiches
You'll love making your own ice cream sandwiches. The best part is that you can choose whatever flavor ice cream you like.
