The recipes on the Dr. Gourmet web site use these principles and translate them to dishes and menus that are familiar to you. I have talked about the 9 areas that have been used in research and what this can mean for you.

But how much? What makes up a score?

One of the first really large studies to look at this determined a threshold based on consumption in population of over 22,000 Greeks. The following quiz is based on those thresholds and you can calculate your own diet score based on these amounts. What's Your Mediterranean Diet Score?

Yellow Squash with Red Peppers

 There is a balance between having squash that still has texture and squash that is soggy. The water helps the squash to steam but it isn't so much that they will get soggy. At the end of the cooking, increasing the heat to medium-high will help evaporate any extra liquid.

Sweet squash with onions and peppers only made better by the herbaceous oregano.

Green Beans with Garlic and Ginger

 Like the Yellow Squash with Red Peppers recipe, the small amount of water also helps the green beans to steam. At the end of the cooking, when adding the soy sauce and pepper, increasing the heat to medium high will help evaporate any extra liquid.

Garlic and ginger combine with the soy sauce for a wonderful Asian flavor. Simple ingredients, great results.
