Dr. Tim Says....

This is my favorite time of the year for so many reasons, but certainly food is one of them. So much will begin to come into season, it's time for planting herbs, and picnics aren't far around the corner.
I always try to convince my patients that this is the time of year to make resolutions. Of course it's customary to do this at New Year's, but if you've not kept those (or didn't really make any to begin with), now's the time. April 1st seems like a great opportunity, so I hereby propose April Fools Day Resolutions. It's Spring....

Tortellini Primavera | Low Sodium Version
Primavera stems from the Latin primus meaning first or spring. I'm a bit old fashioned, I suppose, but I love naming recipes that are full of veggies this way. You're not stuck with the ones in this recipe - use what is fresh if you can. Cook the firmer vegetables first and add the softer ones near the end. There are so many great substitutions - peas, zucchini, spinach, leeks - whatever strikes your fancy.
This recipe is safe for Coumadin® (warfarin) users. Those with GERD / Acid Reflux and those who are lactose intolerant may wish to avoid it.

Assuming this was the right place, I walked in, relieved to be able to fully thaw. Moto: Introduction
