Poached Salmon with Lemon Dill Mayonnaise
Roasted SalmonI love poaching food but don't always think of it. It's the perfect way to cook because it gives you just the right control over the cooking process. The poaching water is a good way to impart flavor and the best part -- no added calories because of having to cook in a fat.

This recipe is safe for Coumadin® (warfarin) users and is low in sodium (salt). Those with GERD / Acid Reflux should avoid this recipe due to the acidity of the mayonnaise, and because of the sour cream, those who are lactose intolerant should also avoid it.

Mashed Parsnips
I also like to use a potato ricer to make my mashed parsnips. It gives the recipe a smoother texture but there's still some body to the dish.
