Pancake Variations

You can turn these buttermilk pancakes into blueberry, blackberry, strawberry or raspberry pancakes by adding about one tablespoon of fresh berries to each pancake as they cook.

After you have placed the batter on the griddle wait until the bubbles begin to form. This is a good indication that the underside is nearing being done and the pancakes are ready to turn.

Sprinkle the berries over the top of the pancakes. They will cook for another 2 minutes or so until the bubbles have burst on top of the batter. Turn the pancake and finish cooking.

Each tablespoon of berries adds about 5 - 10 calories most of which is carbohydrate. I wouldn't try to use frozen fruit for this recipe. It is usually too soggy.
