Thank you for the Warfarin diet on your Web site. I was curious as to the Vitamin K content in yellow and green zucchini.
Dr. Gourmet Says...
Zucchini squash has 4.8 micrograms (mcg) of Vitamin K in 4 ounces. Yellow squash (what we called "summer squash" when I was growing up) has slightly less at 3.4 mcg in 4 ounces.
Both of these would be considered low in Vitamin K.
