How much Vitamin K is in rhubarb?
My grandmother is on Warfarin and I am wondering if rhubarb wll affect the medication that she is on. I'm going to make rhubarb crisp and will baking rhubarb have any issues interfering with her meds?

Rhubarb has a moderate amount of Vitamin K. The USDA database reports that a stalk contains 15 micrograms (35 mcg per cup).
This is not a lot and a rhubarb crisp made with one or two stalks per serving should be safe and not have an effect on her INR.
