Q: How much Vitamin K is in rhubarb?

What is the Vitamin K level in rhubarb? We enjoy it in pie and a dessert. May I eat a reasonable amount - considering I am on Coumadin? Thanks for the chance to ask you this question.

A: Dr. Gourmet Says...

Most recipes for Rhubarb Pie call for about 4 cups of rhubarb for a pie that makes eight slices. That's a half cup per serving. Every half cup of fresh rhubarb has 25 micrograms (mcg) of Vitamin K. This would be considered a moderate amount of Vitamin K and something that should only be consumed carefully.

It may be that making an apple, peach or cherry pie is a better alternative. If the apples are green, don't include the skins.
