Thanks for the chance to ask you this question. A: Dr. Gourmet Says...Most recipes for Rhubarb Pie call for about 4 cups of rhubarb for a pie that makes eight slices. That's a half cup per serving. Every half cup of fresh rhubarb has 25 micrograms (mcg) of Vitamin K. This would be considered a moderate amount of Vitamin K and something that should only be consumed carefully. It may be that making an apple, peach or cherry pie is a better alternative. If the apples are green, don't include the skins. Thanks for writing, Dr. Gourmet
